Sugar Cookies from a Mix

In November, I won a box of sugar cookie mix from Cathy at Strawberries are Gluten Free. It was quite exciting to get them in the mail (thanks again!)

The cookies were really delicious and they disappeared really quickly. However, this experience taught me that I suck at baking thing from a mix. Namely, following simple instructions like using oil instead of melted margarine. (Note: margarine is ~75% oil and 25% water, whereas oil is 100% oil.) So, you guessed it, the cookies were a bit oil-tastic. So, please learn from my mistake and actually follow instructions OR make sure you’re using the correct ratios of liquids. I guess it’s a good thing that I used olive oil, so at least they were healthy fatty. šŸ˜›
