Quesadillas From Scratch

I must apologize – I have not really posted any recipes lately. So, I’m going to post one of our favourite meals – quesadillas made from scratch.

One of Mr. Bean’s coworkers is Mexican and his wife makes SUCH GOOD Mexican food. (ie. every time I see them, I gush about how good the food is.) So one day, Ian’s coworker brought us some Maseca – a corn flour designed to make tortillas.

Tortillas

To make the tortillas, follow the instructions on the package. (A full recipe makes between 10 and 12 tortillas, depending on how big & thick you make them.) Meanwhile, heat up a griddle (or a large frying pan with no oil) to 300F.

Since we’re both non-Hispanic Canadians, we don’t own a tortilla press. So we flatten our tortillas by putting the ball of dough between two sheets of waxed paper and using our glass cutting board to squash it.¬† Mr. Bean has completed flattening that tortilla and is ready to put it on the griddle.

Once the tortillas are flattened, put them on the heated griddle and cook on both sides:

Note: You can use store bought corn tortillas and heat up similarly, but the corn tortillas we get in Calgary suck and these ones taste SO much better!

Now comes my favourite part:

Making of the Quesadillas

After both sides have been cooked, add cheese to cover the tortilla like so:

Once the cheese is melted, fold the tortilla in half until you are ready to eat it.

Once tortillas are ready, serve with a selection of:

  • refried beans
  • sour cream
  • chicken cut in strips with peppers, onions and mushrooms
  • salsa
  • diced tomato
  • lettuce
  • avocado
  • or whatever else you desire

We had sour cream, salsa, refried beans and vegetables for we didn’t have anything else in our fridge!
