Cherry Almond Crisps: Version 1

Last weekend, in the spirit of Advent, my mum and I made our first batch of Christmas cookies! Our favourite cookies of all time are Cherry Almond Crisps. My mum has two recipes for these: the original recipe and the altered recipe. I couldn’t find the altered recipe, so we created our own version of the original, only to find the altered version after we were done.

Cherry Almond Crisps:

The Gluten-tastic version:

1c. Butter
1c. Brown Sugar
2c. Sifted flour
1/8 tsp. Salt
1c. glace cherries cut into quarters
1/2c. blanched, slivered almonds

The Gluten, Dairy and Soy free* version that we made:

1c. coconut oil (this stuff is REALLY finicky.)
1c. brown sugar (we actually used demerara sugar, for all the brown sugar was as hard as a rock, which is a no-no)
1 2/3c. kingsmill brown rice flour
1/3c. tapioca starch
1 tsp. xathan gum
1/8 tsp. salt
1c. glace cherries cut into quarters
1/2c. blanched, slivered almonds
1/2 tsp. baking powder
1 tsp. lemon juice

1. Cream Butter and Sugar.

2. Add flour and salt and mix until smooth.

3. Stir in chopped cherries and almonds

4. Shape into long square rolls (ie. a rectangular prism), wrap in wax paper and chill for several hours in fridge.

5. Slice 1/4″ thick and bake at 350F about 12 minutes or until very light brown. food-photos-0641There they are! I think we overcooked them slightly, but they were still pretty tasty. I’m excited to make them again with the better gluten/dairy/soy free version that is less crunchy!

Note: The gluten/dairy/soy tastic version of these cookies are DELICIOUS. They seriously make me want to eat wheat. But not.

*All margerines and shortenings that I have seen either have soy or dairy in them. Does anyone know of a brand that doesn’t have either?
